Table des Oliviers - Bouillabaisse Fish Soup
Recently I visited a friend for lunch in the suburb of Paris and to my surprise there was a Bouillabaisse on the menu! The Bouillabaisse is a traditional fish soup from Marseille, my hometown.
The soup requires several types of fish mixed together and seasoned with Safran, a very expensive spice. Because of that, too many places in Marseille actually secretly use flavouring instead of the real spice... Shameful. All that to say, it's difficult to find the real thing.
I had the soup as an appetiser and a "Petit Salé" which is another traditional French dish: a piece of fat cold cut with lentils in a delicious sauce. My only remark would be that both dishes were a bit too salty. Otherwise, I was still pleasantly surprised with the rich flavours of both dishes and I would go back to the Table des Oliviers restaurant!
